Job Summary: Act as the Technical Responsible (TR), supervising meal production to ensure quality, sanitary compliance, and customer satisfaction in prison system UANs. Key Highlights: 1. Acting as the Technical Responsible (TR) before CRN and regulatory agencies 2. Full management of meal production in prison system UANs 3. Development of balanced menus and team training **Main Responsibilities:** * Serve as the unit's **Technical Responsible (TR)** before CRN and other regulatory agencies; * Supervise all stages of the meal production process (from receipt to distribution); * Develop, review, and ensure implementation of **SOPs** and **good food handling practices**; * Monitor meal production, distribution, and acceptance; * Conduct food quality control and hygiene\-sanitation condition assessments of the facility; * Conduct periodic training for operational staff; * Develop and monitor **balanced menus**, respecting the profile of the target population and the client contract; * Control costs, inventory, and waste jointly with the kitchen team; * Prepare technical reports, maintain records, and support internal and external audits; * Ensure compliance with regulations from **Health Surveillance, ANVISA, and CRN**; * Maintain direct communication with the contracting client to ensure satisfaction and contract fulfillment. **Requirements:** * Bachelor's degree in Nutrition; * Active and valid registration with **CRN**; * **Proven experience in collective feeding and UAN management within the prison system.** * Knowledge of sanitary legislation (RDCs, ordinances, etc.) and quality management; * Strong communication skills, leadership, and proactivity; * Availability to work **on-site** at the facility.
