Job Summary: Experienced, fast-paced, and proactive professional to work on the griddle, preparing proteins, performing pre-preparations, organizing protein inventory, and maintaining a clean workspace. Key Highlights: 1. Using the griddle for proteins and simple preparations 2. Dividing the workday into pre-preparations of meats and poultry 3. Organizing and cleaning the protein storage area and workspace We seek an experienced, fast-paced, and proactive professional. GRIDDLE USAGE PERIOD: 10:00 AM to 1:30 PM for proteins such as steaks, grilled items, fish, omelets, etc. Perform simple preparations, assisting cooks while the griddle is fully occupied, waiting for items to reach "doneness". For the remainder of the shift, focus on pre\-preparations including: Cleaning sirloin cuts, separating maminha, slicing into steaks, strips, or cubes; cleaning chicken breast and cutting into steaks and/or cubes according to the menu; cleaning chicken thighs/drumsticks; cleaning and cutting beef liver into strips; marinating and seasoning all above-mentioned proteins, as well as fish purchased as fillets or steaks, plus others such as pork ribs and oxtail. Portioning and labeling proteins; Receiving and storing protein-related goods. Maintaining organized and clean protein storage (vertical freezers), identifying low-stock items, and notifying purchasing; Keeping the workspace clean and organized, and participating in routine kitchen cleaning and maintenance; Adherence to food safety handling regulations provided by Sanitary Surveillance; Work schedule: Monday through Saturday \+ 1 Saturday off per month. Estimated working hours: 9:00 AM to 5:00 PM \- Time tracking via electronic time clock.
