Precise Cutting: Masters the use of sharp knives to make exact cuts on fish—essential for the texture and presentation of sashimi and sushi. Rice Preparation: Prepares sushi rice (gohan) with the correct consistency—loose yet cohesive—and at the appropriate temperature, a cornerstone of sushi. Assembly and Aesthetics: Crafts sushi, sashimi, and other dishes, paying close attention to visual beauty and layout, transforming each piece into a work of art. Organization: Maintains a clean, orderly workstation with all utensils and ingredients prepared and ready (mise en place). Customer Interaction: At counter service, may suggest combinations and dishes, explaining details of Japanese cuisine. Creation: Develops new dishes and combinations as experience grows, innovating the menu.
