Responsible for daily production and planning of preparation and plating lines, aiming to organize and optimize the process. * Manage all kitchen staff activities, delegating tasks inherent to each role; * Ensure optimal communication flow across all kitchen areas; * Prepare work schedules, rest periods, and vacation plans for the Back of the House (BOH) team, ensuring compliance with legal requirements. * Guarantee adherence to restaurant opening and closing procedures; * Request purchases and manage receipt and inspection of all utensils, supplies, and uniforms used by Back of the House (BOH) staff, ensuring company-defined process standardization; * Ensure hygienic and sanitary control of all foods present in the restaurant to prevent contamination that could compromise quality or harm consumer health. * Support the Owner Partner in analyzing the P\&L (Profit and Loss report); * Evaluate the entire BOH team, identifying talents and proposing development plans for those not meeting performance expectations for their roles; * Assess inventory levels and suggest promotional sales campaigns for specific products to stimulate sales and inventory turnover to the Owner Partner; * Verify expiration dates and quality, taste-test and approve all products served to customers in the absence of the Kitchen Manager, controlling and guaranteeing quality; * Organize preparation of staff meals (break).
