Responsibilities and assignments
As **Sushiman** at **FIT Group**, you will be the heart of our Japanese culinary operation, ensuring authenticity and excellence in every preparation. Your main responsibilities and assignments include:
**Assembly, Execution, and Standards**
* **Prepare sushi, sashimi, temaki**, and other Japanese dishes according to the menu, technical specifications, and brand standards.
* Ensure **precision in fish cutting**, cooking, and preparation of Japanese rice (shari), respecting ideal time, texture, and temperature.
* Control **dish assembly** with aesthetics, balance, and fidelity to the brand’s visual standard.
* Promptly report any **ingredients failing to meet standards** or potentially compromising final product quality.
**Hygiene, Safety, and Organization**
* Strictly comply with **good handling practices** and food safety regulations (ANVISA and internal guidelines).
* Ensure **cleanliness and organization** of workstations, equipment, and utensils throughout each shift.
* Perform **sanitization of raw foods**, maintain appropriate storage temperatures, and respect ingredient traceability.
* Participate in **audits and training sessions** led by the company’s nutritionist team.
**Creativity and Authenticity**
* **Suggest menu innovations**, new cuts, presentations, or combinations—always respecting the brand’s identity and focusing on sensory experience.
* Participate in **new dish launch tests**, promotional events, or special activations for Japanese cuisine.
* Contribute to menu evolution with a **technical eye and controlled creativity**—always aligned with what is commercially viable, productive, and captivating.
**Control, Costs, and Quality**
* **Minimize waste** and fully utilize ingredients, respecting yield and standard utilization rates for fish.
* Monitor **expiration dates, temperature, and storage conditions** of perishable foods.
* Support the kitchen leader in **inventory management, COGS control**, and evaluation of turnover for Japanese ingredients.
* Assess yield and propose **process improvements in production**, focusing on performance and sustainability.
**Integration with Kitchen and Dining Room**
* Work **collaboratively with the rest of the kitchen**, respecting collective rhythm and supporting operational flow.
* **Coordinate delivery with the dining room** clearly and precisely, ensuring speed, aesthetics, and correct order sequence.
* Respect preparation time, maintaining harmony between performance and quality.

**Work location:** FIT Group stores at Porto Alegre Airport
**Salary:** To be discussed.
**Benefits:** Transportation allowance + on-site meal benefit + tips + life insurance + SESC partnership.
**Schedule:** 6 days on / 1 day off (1 weekly day off + 1 Sunday per month).
**Available shifts:**
**Morning:** 6:00 AM – 2:20 PM
**Afternoon:** 2:00 PM – 10:20 PM
Employment type: Permanent CLT contract
Compensation: R$2.118,65 – R$3.000,00 per month
