Count served portions per unit. Season foods prior to preparation. Weigh and record weights of preparation containers according to portion numbers specified in the distribution map. Distribute prepared meals according to the distribution map to designated service delivery points. Peel and cut vegetables and greens as needed. Taste-test all preparations and finalize them. Collect samples from prepared meals. Portion meals when required. Sanitize and clean the work area, utensils, and equipment.
