Job Summary: Responsible for sanitation, food preparation, portioning, and plating; quality and inventory control; and team management in a kitchen environment. Key Highlights: 1. Responsibility for equipment integrity and maintenance. **LEAD COOK** **Job Description:** Responsible for sanitation of fresh produce and food preparation; portioning, weighing, and labeling all menu items; preparing recipes according to technical sheets; ensuring food quality and controlling raw materials used, monitoring quality standards and losses/waste; plating dishes according to required standards; managing inventory and communicating missing items via purchase lists; organizing and cleaning the kitchen; recording daily occurrences related to losses, waste, and breakage of utensils or equipment; ensuring physical integrity and maintenance of equipment; conducting monthly inventory; performing kitchen-related tasks; and other duties associated with the position. **Requirements:** Completed High School education. Knowledge of food preparation, portioning, and sanitation. Availability to work in Ponta Negra until 11:20 PM. Experience in restaurants as a Lead Cook and in team management.
