Ensure quality standardization and comply with sanitary regulations Supermarket seeking a Baker professional in São Paulo (South Zone). Hirota Food is a supermarket chain offering a wide variety of food and non-food products. With a focus on quality and customer service, the company aims to provide a differentiated shopping experience. **Responsibilities:** Select, weigh, and mix ingredients according to technical specifications. Prepare equipment such as mixers, rollers, and beaters. Monitor dough time and temperature (including natural fermentation), ensuring optimal readiness before baking. Cut, weigh, and shape breads, pastries, and savory items (e.g., brioche, croissants, focaccia). Control baking by adjusting temperatures and times specific to each product type (e.g., French bread, artisanal breads, cakes). Perform mise en place (workstation preparation), clean utensils, and strictly adhere to Good Manufacturing Practices (GMP) and sanitary regulations. Monitor ingredient expiration dates and stock levels, conduct inventories, and place purchase orders. Create and test new recipes to diversify the menu and cater to specific audiences, such as celiac customers (gluten-free breads). Assign tasks to assistants and ensure quality standardization. Provide customer service when required. Previous experience as Pastry Chef, Baker Assistant, Bakery Chef, or Oven Operator may indicate suitability for some responsibilities of this position. High school diploma required.
