* Clean, cut, portion, and store vegetables, leafy greens, fruits, and other cold kitchen ingredients. * Assist in preparing rice (*shari*), sauces (such as tarê and seasoned shoyu), and other Japanese cuisine accompaniments. * Organize and replenish workbench containers before and during service (*mise en place*). * Support opening and closing procedures for the cold kitchen, ensuring counters, refrigerators, and utensils are clean and ready for use. * Monitor expiration dates, labeling, and storage conditions of products kept in walk-in coolers and refrigerators. * Assist in receiving, verifying, and storing cold kitchen goods and supplies. * Ensure continuous cleanliness of the workstation, cutting boards, knives, and other equipment throughout the shift. * Strictly follow good manufacturing practice manuals and food hygiene and safety regulations (ANVISA). * Collect waste and keep sector trash bins organized and sanitized. * Minimize waste and spoilage during ingredient portioning.
