Financial Control and Results * Manage operational budget, controlling input costs, labor, and general expenses. * Monitor key indicators such as COGS, average ticket, productivity, working hours, and operating margin. * Lead recovery plans for underperforming units, turning KPIs into actionable steps. * Analyze sales reports, profitability, and team performance for strategic decisions. People Management and Culture * Recruit, train, and supervise waitstaff, kitchen staff, and cashiers. * Conduct feedback sessions, performance evaluations, and development plans. * Promote FIT culture in daily practice, serving as a role model for discipline, attitude, and consistency. * Collaborate with HR and Management to drive engagement, positive work environment, and talent retention. Operational Excellence * Be present across units, conducting checklists, routine rituals, and follow-ups. * Ensure standards of cleanliness, organization, and food safety (ANVISA and audits). * Control inventory, expiration dates, and waste with focus on operational efficiency and healthy COGS. * Supervise store opening and closing procedures, including cash reconciliation.
