Job Summary:
Professional responsible for procurement management, operations, and consultative customer service in a high-end charcuterie shop, with emphasis on delicate products and food safety.

**Responsibilities:** Procurement and Assortment Management: Select and negotiate with domestic and international suppliers of cheeses and charcuterie; manage inventory turnover to ensure product freshness.
Operations and Slicing: Perform and supervise precise slicing ("paper-thin" technique) of delicate items such as Jamón Ibérico, Prosciutto di Parma, and hard cheeses.
Training: Train counter staff in customer service techniques, hygiene practices, and gastronomic knowledge.
Consultative Service: Explain product origins, curing methods, and suggest food-and-wine pairings to customers.
Food Safety: Ensure strict compliance with health surveillance regulations and temperature control protocols.
**Working Hours:** Rotating 6-day workweek (1:00 PM – 9:00 PM); one Sunday off per month
**Requirements:** Minimum 3–5 years of experience in high-end charcuterie shops, gourmet delicatessens, or professional kitchens. **Specific Knowledge:** Proficiency in automatic and manual slicers (e.g., Berkel). In-depth knowledge of cheeses (terroir, aging) and charcuterie. Basic understanding of cost management (COGS) and inventory spreadsheets. **Education:** Completed high school (mandatory). Higher education or technical training in Gastronomy, Nutrition, or Commercial Management is desirable.
**Preferred Qualification:** Certification as a Wine Sommelier or Cheese Specialist (Sommelier de Quesos).
