**Job Description:** Responsible for preparing and assembling sushis, sashimis, temakis and other cold dishes of Japanese cuisine; select, cut and portion fish, seafood and other ingredients according to quality and hygiene standards; keep the sushi counter and utensils always clean, organized and well-stocked; control inventory of supplies, requesting replenishment when necessary; ensure proper food storage and preservation; guarantee visually appealing and standardized presentation of dishes; handle customized orders, respecting customer preferences and dietary restrictions; cooperate with kitchen and dining room staff to ensure smooth service operations; among other responsibilities. **Requirements:** Complete Elementary School education. Knowledge of cutting techniques and handling of fish and seafood. Knowledge of food preparation, portioning and sanitation. Knowledge of sushi rice and oriental sauce preparation.
