Job Mission Operate, monitor, and control industrial bakery ovens, ensuring products are baked according to the company’s established standards for quality, food safety, yield, and deadlines. **Shift:** According to production schedule, may include night shifts Main Responsibilities * Operate industrial gas deck ovens, performing heating, temperature adjustment, steam application, baking time, and conveyor belt control. * Monitor the baking process, ensuring standardization of product color, texture, volume, and finish. * Receive molded doughs, baking trays, or conveyor belts, organizing product entry into and exit from the oven. * Monitor critical process parameters (time, temperature, humidity/steam), making adjustments as needed. * Identify non-conformities during baking (under-baking, excessive browning, deformations) and immediately report them to supervision. * Unload baked products, directing them to cooling, slicing, or packaging, according to the production flow. * Maintain cleanliness and organization of the area and equipment, following hygiene and food safety procedures. * Complete production records, baking controls, quality checklists, and forms required by the management system. * Strictly comply with Good Manufacturing Practices (GMP), HACCP, and occupational safety regulations. * Support product changeovers, recipe adjustments, and trials of new items when requested. * Ensure equipment preservation, reporting malfunctions, wear, or preventive maintenance needs. * Collaborate synergistically with dough preparation, shaping, cooling, slicing, and packaging areas. * Grease molds and baking trays when required and requested. * Clean baking trays, molds, and production utensils when requested. Detailed Operational Activities * Pre-heating and stabilization of the oven according to the technical sheet for each product. * Adjustment of thermal zones, steam, and conveyor belt speed. * Visual and technical assessment of baking point. * Separation and disposal of non-standard products. * Support during production start-up and shutdown setup. Job Requirements Education * Completed elementary education (high school diploma preferred). Experience * Prior experience operating industrial bakery ovens or food processing equipment (preferred). Technical Knowledge * Basic understanding of industrial baking. * Fundamental knowledge of food safety and GMP. * Basic understanding of time and temperature control. Performance Indicators (KPIs) * Percentage of products meeting quality standards. * Rate of losses due to incorrect baking. * Adherence to production timelines. * Compliance with GMP and safety procedures. Working Conditions * Possibility of working **night shifts**, according to production planning and the company-defined schedule. * Industrial environment with exposure to heat. * Mandatory use of PPE (heat-resistant gloves, safety footwear, hairnet, among others).
