




### **General Description** Responsible for producing Neapolitan-style pizzas, strictly adhering to traditional techniques of fermentation, dough stretching, topping assembly, and high-temperature oven baking. Ensures quality, standardization, and efficiency in preparation while maintaining an organized workplace compliant with hygiene and food safety regulations. ### **Key Responsibilities** * Prepare and handle long-fermentation doughs. * Stretch pizza discs using the traditional hand-stretching method. * Prepare ingredients, sauces, and toppings according to house standards. * Bake pizzas in wood-fired ovens or high-temperature ovens. * Ensure optimal dough characteristics (texture, airy rim, color, and doneness). * Maintain a clean, organized, and well-stocked workstation. * Monitor oven temperature and preparation timing. * Assist in inventory control, storage, and shelf-life management of ingredients. * Uphold hygiene, food safety, and proper handling practices. * Collaborate with the team to ensure efficient service. ### **Requirements** * Prior experience as a pizzaiolo, preferably specializing in Neapolitan-style pizza. * Knowledge of natural or long-maturation fermentation techniques. * Proficiency in operating high-temperature ovens. * Agility, attention to detail, and ability to work effectively in a team. * Availability for a 12x36 shift schedule. ### **Preferred Qualifications** * Experience working in artisanal pizzerias. * Formal training in baking or pizzaiolo courses. * Basic knowledge of inventory control and proper handling practices. ### **Benefits** * On-site meals * Health insurance plan * Dental insurance plan * Bonus points * Uniform laundry service Minimum Education: High School Diploma
