Job Summary: Responsible for the technical management of wine production, planning and monitoring all stages of the winemaking process to ensure product quality and identity. Key Highlights: 1. Manage the oenology team and control production parameters OBJECTIVE: Be responsible for the technical management of the winery's wine production, planning and monitoring all stages of the winemaking process—from grape reception to bottling—to ensure product quality, identity, and consistency. MAIN RESPONSIBILITIES: * Supervise the entire winemaking process, from grape reception to bottling, and assist in related activities when necessary. * Develop and implement oenological strategies for producing wines and sparkling wines with consistent quality standards. * Conduct physicochemical and sensory analyses, interpret results, and adjust processes as required. * Develop wine blends and new product lines. * Manage and guide the oenology technicians and assistants team. * Plan and monitor production and fermentation schedules. * Control production parameters: acidity, alcohol content, pH, residual sugar, color, and aroma. * Ensure maintenance and calibration of laboratory and production equipment. * Prepare technical reports on production, testing, and quality. * Participate in internal and external audits to ensure compliance with regulations and certifications. * Collaborate with marketing and sales departments on product launches and technical communication. * Participate in commercial and tourism events when necessary. * Submit declarations to competent authorities (SISDEVIN, MAPA, Federal Police, among others). Requirements: Bachelor's degree in Oenology; Experience and knowledge of oenological processes; Ability to work effectively in a team; Proactive, responsible, and committed profile.
