**Job opening for Sete Lagoas** **Requirements:** * Bachelor's degree in Food Engineering or related fields. * Knowledge of laboratory routines and food safety is required. **What will your daily routine be?** * Perform physicochemical and sensory analyses of raw materials—milk / liquid whey and cream—at the reception stage; analyze milk samples from rural producers to monitor incidence of physicochemical fraud and of premix (lactose-based base after ingredient mixing); guide production area regarding potential deviations and corrective actions needed; * Monitor the manufacturing process of dairy desserts by collecting samples for microbiological, physicochemical, and sensory evaluation at various stages per sampling plan; also monitor the manufacturing process of requeijão by collecting samples for physicochemical and sensory analyses at various production stages per sampling plan; * Perform physicochemical and sensory analyses of finished products, verify packaging conformity, manufacturing date, expiry date, batch number, and product weight during filling, and analyze potable water as instructed; * Collect fruit preparation samples for microbiological analyses whenever necessary; * Monitor samples daily in incubation ovens for quick test, mould test, 15°C oven, 10°C shelf life, and UHT product shelf life to enable identification of microbiological, physicochemical, and sensory deviations and to monitor product characteristic stability during shelf life; * Sample products during fermentation and refrigerated storage stages for microbiological, physicochemical, and sensory analyses; * Daily monitor raw materials in platform silos, analyzing pH, temperature, acidity, and fat content to ensure raw materials meet established standards; * Continuously calibrate equipment such as cryoscopes, pH meters, and refractometers to ensure analytical result accuracy and reliability; * Verify temperatures of product incubation ovens, microbiological plate incubation ovens, and refrigerators used for storing laboratory supplies to support process adequacy and result reliability. * Perform daily cleaning and sterilization of materials used in microbiology to ensure timely availability of necessary resources for microbiological analyses; * Prepare solutions such as erythrosine, eriochrome black T, and indicators such as bromothymol blue when required for analyses; * Weigh/fractionate low-concentration ingredients for production area use—such as stevia, rennet, nisin, and colorants—to ensure appropriate proportions; * Verify completion and archiving of laboratory analytical records per instructions from immediate supervisor; * Collect swabs via bioluminescence and microbiological methods to support monthly sampling plan execution and guarantee adequate equipment hygiene; * Perform daily analyses of solution concentrations used in CIP (Cleaning in Place) processes: sodium hydroxide, peracetic acid, nitric acid, and other solutions if necessary; * Manage inventory of reagents and supplies used in routine activities to maintain minimum stock levels required for laboratory analytical activities; * Upon receipt, verify laboratory purchase list items, checking invoice consistency with physically received quantity, appropriate expiry dates, and integrity of glassware, reagents, solutions, and equipment; * Review standard analytical procedures (SOPs), and conduct training sessions after document approval by area manager; * Clean and organize workplace, performing activities specified in departmental hygiene plans according to frequencies described in those documents; * Perform duties in accordance with safety, health, hygiene, quality, environmental, and occupational safety regulations; **Schedule:** Availability required
