Tasks include, but are not limited to: * Prepare and serve food safely and hygienically; * Ensure that the kitchen, refrigerators, freezers, pantries, and dining areas are maintained under appropriate hygiene conditions; * Supervise all galley staff regarding meal preparation and menus; * Count inventory at least 2 (two) times per voyage, or whenever requested. Conduct this count carefully, accurately record quantities, and report them to the captain or his designated representative for provisioning requests; * Monitor expiration dates of all supplies under your responsibility; * Always follow personal hygiene procedures, as well as those for utensils, equipment, furniture, environmental hygiene, food safety, proper handling and preparation of food, and maintenance of food within temperature parameters established by legislation, thereby protecting customers from foodborne illnesses (FBI); * Keep assigned facilities, equipment, and utensils in good operating and hygienic condition; * Complete all required records established by **RDC 216 and RDC 72** and other applicable regulations and company requirements; * Maintain records filed properly and in an organized manner; * Comply with and enforce all orders or instructions received from superiors related to services within your specialty; * Check that your "Seafarer Health Certificate" is valid and ensure it is renewed before expiration; * Participate in integrated operations; * Be responsible for following the menu determined by the Catering Department. Execute preparations with pleasant taste, good presentation, respecting the proposed variety; * Maintain adequate levels of hygiene, cleanliness, and organization in the kitchen, dining room, food pantry, and refrigerated chambers; * Be accountable for the proper use of inputs allocated for daily kitchen operations, striving to prepare food as hygienically and scrupulously as possible, avoiding losses and waste; * Work carefully and skillfully, using the necessary PPE to perform duties safely and requiring others involved to do the same; * Plan activities to follow and respect procedures inherent to the role; * Perform specific baking tasks on board vessels whenever necessary; * Inspect all received provisions, reporting any qualitative and/or quantitative discrepancies to the Captain or his designated representative within 48 hours; * Confirm the vessel's order against the physical delivery and match it with the delivery invoice; * Monitor food distribution during meals; * Particularly on Barbecue Day, when operating outside the vessel’s main structure, take all necessary precautions for food distribution, storage, and protection, ensuring compliance with hygiene and safety procedures; * Food preparation and distribution are exclusively the responsibility of the galley team; * Wear the clothing designated and appropriate for culinary services, keeping it always clean and tidy; * Inform the Captain or his designated representative of any suspicion regarding your own health or that of the Steward; * Immediately report to the Captain or his designated representative any abnormalities detected in services under your responsibility; * Assist and guide the Steward whenever necessary, working harmoniously and productively together; * On vessels with outsourced hospitality, the Cook must work in partnership and under the coordination of the contracted company. Your work schedule, day or night shift, will be defined according to operational needs; * Work shifts may alternate between day and night, complying with current legislation and according to vessel requirements; * Do not provide food or provisions without explicit authorization from the vessel's Captain; * You are responsible for performing your tasks punctually and in accordance with the company's quality standards. \*\*\*\*\*All our opportunities are also open to PWDs (People with Disabilities).
