Management of product preservation and storage **Job Description:** ---------------------- The fishmonger is the professional responsible for handling and preparing fish, crustaceans, and mollusks. Cleaning and cutting: scaling, eviscerating (removing internal organs), washing, removing gills, and cutting whole fish into fillets, steaks, or cleaned fish according to store standards. Seafood handling: cleaning and preparing shrimp, squid, mussels, etc. Packaging: preparing trays and packaging products for sale. Quality control: checking fish freshness to ensure no spoiled products are present. Temperature maintenance: ensuring proper ice usage for product preservation at the counter. Hygiene: keeping the work area, utensils (knives, cutting boards), and refrigerated chambers clean and organized. Receiving goods: assisting in receiving whole fish or raw cuts from suppliers.
