Job Summary: The Kitchen Assistant supports cooks, pastry chefs, and salad preparers by keeping the food preparation area clean and organized, and performs tasks in accordance with quality, safety, and hygiene standards. Compliance with food safety and hygiene regulations The Kitchen Assistant performs diverse tasks to support cooks, pastry chefs, and salad preparers, maintaining a clean and organized food preparation area, while carrying out duties in compliance with operational procedures and standards related to quality, safety, hygiene, health, and environmental preservation. Main Responsibilities * Assist in the hygiene of vegetables and legumes, including leaf removal, rinsing under running water, and applying a specific chlorine solution to ensure food safety. * Assist in salad preparation by peeling and cutting vegetables and legumes. * Assist in cutting beef, poultry, and fish—cleaning, deboning, and adhering to established cutting standards and weight specifications. * Assist in preparing seasonings and fillings for meats, respecting each meat type and the defined menu. * Support food pre-preparation, including hygiene, cutting, and assisting in cooking processes such as grilling steaks and placing preparations in the combi oven. * Assist in preparing various desserts, such as sweets and fruits, as well as restocking display counters. * Prepare breakfast, including brewing coffee and milk and toasting bread, organizing and overseeing distribution. * Set up the distribution counter, cleaning and organizing sinks, restocking juices, and counting plates. * Wash condiment dispensers, restocking sauces, salt, and toothpicks. * Assist in separating food waste for monitoring, sorting paper, peels, and bones. * Provide support during meal service periods (breakfast, lunch, snacks, and dinner), attending customers, restocking food, utensils, water, and juices, and cleaning tables and counters. * Identify unlabeled open products and correctly record expiration information. * Assist in loading and unloading goods, verifying invoices, and properly organizing and storing inventory. * Assist in measuring food and equipment temperatures, completing control spreadsheets, and collecting samples from prepared dishes. * Complete the daily service requisition spreadsheet, indicating the quantity of raw materials used. * Serve customers at the gourmet cashier, operating the sales system and performing cash closing with report generation. * Maintain the food preparation area clean and organized daily. * Perform pre-washing and washing of utensils and equipment, strictly following hygiene protocols. * Dispose of waste properly—removing trash, storing it in designated areas, and cleaning trash bins. * Assist in deep cleaning facilities according to schedule. * Use PPE correctly and be responsible for its storage and maintenance. * Take care of equipment and utensils used, whether owned by the company or the client. ______________________________________________________________________ Machinery and Equipment Used Combi oven, stove, peeler, grater, meat grinder, deli slicer, dishwashing machine, blender, mixer, fruit juicer, scale, microwave oven, refrigerator, proofing cabinet, display counter, coffee machine, knives, cleavers, brooms, mops, buckets, washing machine, mop, carts.
