**Main Responsibilities:** * Manage and supervise all stages of the industrial process of **cattle slaughter and deboning**, ensuring productivity, quality, and safety. * Ensure compliance with **sanitary, legal, and regulatory standards** (MAPA, SIF, RIISPOA, GMP, HACCP). * Plan, control, and optimize **daily production**, aligning production capacity, demand, and resources. * Lead operational and supervisory teams, promoting **training, operational discipline, and leadership development**. * Monitor and reduce **losses, waste, and rework**, ensuring improved carcass yield. * Track performance indicators (KPIs), such as **efficiency, yield, costs, absenteeism, and quality**. * Ensure compliance with **occupational safety regulations** and proper use of PPE. * Collaborate with **Quality, Maintenance, Production Planning and Control (PCP), HR, and Logistics** departments. * Drive continuous improvement of industrial processes, proposing **innovations and standardizations**. * Be responsible for internal and external audits. **Requirements and Qualifications:** * Bachelor’s degree in **Food Engineering, Production Engineering, Veterinary Medicine, Animal Science, or related fields**. * Proven experience in **cattle slaughterhouses**, especially in slaughter and deboning. * Solid knowledge of **sanitary legislation, animal welfare, and quality**. * Leadership profile, decision-making ability, and conflict management skills. * Ability to analyze indicators and control costs. **Desirable Competencies:** * Strategic vision and results orientation. * Organization, discipline, and sense of urgency. * Negotiation skills and clear communication. * Experience with **SIF or federal inspection** is a plus.
