A dynamic environment focused on quality and standardization. **About the position:** * Prepare sushi, sashimi, uramaki, and hosomaki with precision and speed; * Perform fish cuts (salmon, tuna, and white fish) using proper techniques; * Assemble dishes according to required presentation and quality standards; * Support daily production in the Japanese kitchen; * Ensure organization, cleanliness, and proper storage of ingredients; * Assist in inventory control and material restocking; * Strictly comply with food hygiene and safety regulations. * Proven experience as a Sushiman (intermediate level); * Knowledge of handling raw foods; * Experience in fish cutting; * Hands-on experience assembling Japanese dishes; * Speed, organization, and attention to detail. * Experience in high-volume restaurants (buffet or delivery); * Experience working collaboratively in a professional kitchen; * Basic knowledge of inventory control; * Proactive and collaborative mindset.
