Job Summary: Replace the II Maître in managing the dining room, ensuring implementation of the service plan, supporting scheduling, training, and KPIs as the tactical link between strategy and execution. Key Highlights: 1. Operational Co-Leadership and Alignment with Kitchen/Bar 2. People Management, including Performance Monitoring and Training 3. VIP Guest Service and Incident Handling Replace the II Maître in managing the dining room and ensure execution of the service plan, supporting scheduling, training, and KPIs. Acts as the tactical liaison between the Maître’s strategy and the execution by Team Leaders / Waiters. Serves as the deputy conductor: maintains the dining room’s rhythm when the II Maître is occupied elsewhere—and ensures the plan becomes reality without compromising elegance. * Operational Co-Leadership – lead briefings, align with Kitchen/Bar; ensure mise-en-place and service standards. * People Management – support scheduling, vacations, and days off; monitor performance and training of Team Leaders / Waiters / Bussers. * Client Incidents – serve VIP guests when delegated; handle moderate incidents and escalate critical ones. * Routine KPIs – monitor table turnover, average check, upselling, timing, order errors; consolidate reports for the Maître. * Events/Groups – coordinate setup and execution per briefing; ensure smooth workflow with Stewarding.
