Prepare and execute Japanese cuisine production, creating and suggesting new à la carte menus and side dishes, while serving customer demand with a focus on quality and hygiene.

#### **About the position:**
Prepare and execute Japanese cuisine production, creating and suggesting new à la carte menus and side dishes to meet customer demand, in compliance with technical and quality standards, as well as safety and hygiene procedures.

#### **Main responsibilities:**
* Prepare and execute Japanese cuisine production, packaging and displaying products;
* Create and suggest new à la carte menus and side dishes to meet customer needs;
* Monitor and inspect the Japanese cuisine sales area, checking displayed product quantities, verifying expiration dates, and removing items unfit for consumption or with damaged packaging;
* Serve customers directly at the counter, suggesting Japanese cuisine side dishes, explaining fish origins, assembling packaging according to customer orders, and recording customized orders;
* Monitor refrigerated counter operating conditions and verify adequate ice supply;
* Guide and train Operator II in performing Japanese cuisine-related tasks;
* Manage raw material inventory for Japanese cuisine production, flagging items requiring replenishment, identifying shortages, and notifying immediate supervisors for necessary actions;
* Maintain quality and standardization of Japanese cuisine products by following company-provided recipes;
* Monitor and prepare ingredients used in Japanese cuisine preparation, such as rice cooking, grilling of fish and seafood, sauce cooking, and washing and cutting of vegetables and greens;
* Identify and, where possible, correct any raw material quality deviations, immediately reporting them to immediate supervisors;
* Contribute to company product quality by applying established quality standards and procedures during task execution;
* Clean used utensils and equipment, collecting and placing waste and residues into appropriate containers to comply with safety and environmental standards as specified in the Good Manufacturing Practices manual;
Use PPE (Personal Protective Equipment) appropriately to ensure individual protection in the workplace and prevent accidents, adhering to company-established safety regulations.
