RESPONSIBILITIES: 1\) CHAMBER TEMPERATURE VERIFICATION * Check if chamber temperatures are correct: meat chambers between 0º and 5º, frozen chambers between -10º and -15º, and verify that the machine room is functioning properly. 2\) RESTOCKING COUNTERS IN THE SALES AREA * Check counter cleanliness; together with department staff, restock meats and frozen products, ensuring they are correctly displayed, within validity period, and properly priced. 3\) PRICE VERIFICATION * According to the price report issued by CPD, verify daily prices, prepare promotional signs and place them in visible locations, and ensure that prices for whole cuts of meat are differentiated from per-kilo prices—that is, lower. Also, during weighing, confirm that the scale label exactly matches the meat or product purchased by the customer, thus avoiding inventory errors, price discrepancies at PDVs, and consequent customer distrust. 4\) PORK DEBONING * Perform deboning together with other butchers, then forward items for weighing and reporting to CPD. 5\) SEASONED PRODUCTS PRODUCTION * Daily production of seasoned items such as fried chicken pieces, meatballs, rolled steaks, wings and thighs, sausage production, etc.; on weekends, produce stuffed chicken, pork loin, and stuffed lagarto cuts. 6\) INVENTORY ASSESSMENT * At the beginning of the week, assess meat and chicken inventory together with the manager, and make purchase suggestions. 7\) MEAT RECEIVING SUPERVISION * Inspect incoming meat deliveries for quality, weight, and expiration date (open and check each box individually), verifying that products show no irregularities or are unfit for resale and consumption. Afterwards, store properly in cold chambers to prevent expired or spoiled goods from remaining in stock. Arrange meat boxes with spacing to ensure better refrigeration and preserve product quality. 8\) PRICE QUOTATION * Conduct weekly quotations to analyze whether prices are competitive and evaluate costs and profit margins. 9\) CUSTOMER SERVICE * Guide staff to provide excellent customer service, always offering additional products so customers leave fully satisfied, and consistently strive to meet customer needs. 10\) MEAT UTILIZATION * Weekly assessment of packaged meats and pork carcasses to evaluate losses due to blood loss and trimming, then report to management for price and margin analysis. 11\) SECTOR SANITATION * Daily cleaning of cold chambers, counters, band saws, deboning tables, knives, and utensils. 12\) EXPENSE CONTROL * Avoid unnecessary expenses: do not leave lights on when unnecessary, keep counter and chamber doors closed, and use only the required amount of cleaning and production supplies.
