* The kitchen assistant is a gastronomy professional responsible for the initial stages of food preparation in industrial kitchens. Their duties range from sanitation to assisting in the preparation and cooking of dishes and meals. Their role is to support and assist the head chef and other cooks. Cleaning work materials—such as pots, knives, stoves, and dishes—is part of their responsibilities. They are also responsible for sorting and handling the food items to be used. Thus, they chop, peel, grate, and pre-cook ingredients involved in kitchen preparation. Typically, they follow the instructions of the cooks and meet their needs—and those of the head chef—who oversees all processes in the kitchen. The assistant is also one of those responsible for organizing the kitchen pantry, where food is stored, sorted by product type, protected to ensure preservation, and checked for expiration dates to avoid waste of materials in the kitchen. Their general role is to organize the entire kitchen so that everything operates in accordance with standards set by Brazil’s National Health Surveillance Agency (Anvisa), whether in a restaurant or a cafeteria. * Experience in the field.
