Job Summary: We are seeking a Sushi Assistant to provide operational support to the head sushi chef, ensuring efficiency in production and preparation of ingredients in the Oriental kitchen of a dark kitchen. We focus on speed and accuracy in delivery, aiming to deliver a high-quality gastronomic experience within a healthy and cohesive work environment. **Job Objective:** Provide comprehensive operational support to the head sushi chef, ensuring production line efficiency and proper preparation of ingredients. The focus is to ensure that the cold kitchen’s back-of-house operations run smoothly, organizedly, and with maximum hygiene. **Responsibilities:** Assist in preparing Japanese cuisine dishes such as sushi, sashimi, and temaki. Perform food and ingredient cleaning, peeling, and cutting. Organize and maintain rigorous cleanliness of the work area and utensils. Support the head sushi chef in order assembly and finalization. Perform continuous inventory control and restocking in the kitchen. **Requirements:** Proven experience as a Sushi Assistant or in a Japanese kitchen. Basic knowledge of fish cutting techniques and familiarity with high-volume kitchen routines. Knowledge of good food handling practices. Speed, attention to detail, and ability to work under pressure. Full availability to work night shifts and on weekends. **Preferred Qualifications:** Knowledge of delivery order standardization. Strong teamwork skills and a proactive attitude toward inventory organization. **Additional Information:** Employment type: CLT. Work model: On-site (6-day workweek with 1 day off). Working hours: 44 hours per week (focused on night shifts and weekends). **Salary:** R$ 1\.926,00\. **Benefits:** Transportation allowance.
