Bourbon Gastronomia is seeking an Assistant Manager A\&B to join the team at Bourbon Resort Atibaia, located in the city of Atibaia \- SP. This professional will be responsible for coordinating A\&B department activities, providing customers with the best experience in all aspects related to food, gastronomy, and service. Maximizing productivity and service excellence through proper resource management, ensuring satisfactory results such as high A\&B satisfaction scores. Always adhere to the correct practices of general policies and human resources policies of Bourbon Gastronomia. RESPONSIBILITIES: * Coordinate good practices in the A\&B department by supervising team service, personal hygiene, and employee conduct; participate in menu development through customer suggestions and analysis of market popularity and productivity. * Check the organization of the employee cafeteria, aiming to maintain the quality required by the company. * Request preventive and corrective maintenance in sectors related to your area of responsibility, validate purchase requests for department materials, and approve team work schedules. * Receive suppliers wishing to present new products or services, evaluate quality and differentiators, provide direct support to the purchasing team for visits, and conduct evaluations. * Supervise inventories of buffet materials (materials, utensils, and equipment), ensuring their execution and waste control in coordination with Accounting, analyzing results, and proposing actions to reduce losses, breakages, and discrepancies. * Ensure compliance with hygiene and safety standards required by Health Surveillance, guide employees in their tasks, provide direct support to the Nutrition team, and monitor internal and external audits regarding Food Safety non-conformities. * Monitor the department's average ticket variation and expense budget to achieve established targets. * Conduct strategic planning for the department together with your immediate supervisor, including annual budget preparation for all sales points, and participate in planning proposed marketing strategies. * Validate technical sheets for sales points, paying attention to cost, selling price, quality, standards, preparation time, equipment needs, and customer acceptance, proposing changes when necessary. * Manage wine cellar and wine purchases for the wine list, focusing on effective strategies to maximize results. * Seek initiatives that enable optimization and improvement of processes and activities within your area to reduce operational risks, increase operational scalability, and enhance the experience of internal customers. REQUIREMENTS: * Planning and Organization. * Technical Courses in Gastronomy or Hotel Management. * Knowledge of Costs and Revenues. * Knowledge of Operational Dynamics in Hotels \& Resorts. * Knowledge of Good Manufacturing and Food Handling Practices and Current Sanitary Legislation. * Systemic Vision. * Results and Customer Orientation.
