Responsibilities: Prepare sushi, sashimi, temaki, and other Japanese dishes according to technical specifications. Perform precise and aesthetically standardized fish cuts. Ensure organization, cleanliness, and hygiene of the workstation (complete mise en place). Monitor food expiration dates, proper storage, and handling. Assist in inventory control and supply requisition. Strictly adhere to food safety regulations and good handling practices. Collaborate closely with the dining room and delivery teams to ensure quality standards and timely dispatch. Requirements: Proven experience as a Sushiman. Knowledge of traditional cutting techniques and piece assembly. Agility and organization under pressure. Commitment to operational standards and discipline. Availability to work during the stated schedule. Preferred Qualifications: Experience in high-volume restaurants. Knowledge of waste control and standardization via technical specifications.
