




**Desired Education:** * High school diploma. * Basic Japanese cuisine course (desirable). **Experience:** * Minimum 6 months of experience in a Japanese kitchen, as a kitchen assistant or cold kitchen helper. **Functions and Responsibilities** **Preparation and Organization** * Clean and portion fish, seafood, and vegetables. * Cook and season sushi rice (shari) correctly. * Restock the workstation following mise en place. **Assembly and Support** * Assemble simple temakis, hot rolls, and combination plates, etc. * Prepare cold appetizers such as sunomono, carpaccio, ceviches, etc. * Fry ingredients for hot rolls, tempuras, and crunchy toppings, etc. **Cleaning and Sanitization** * Wash utensils, cutting boards, knives, and sushi mats, etc. * Keep the cold workstation clean, stocked, and sanitized throughout the shift. * Strictly follow food preservation and safety SOPs. * Perform general kitchen cleaning according to SOPs, following the scheduled agenda and at the end of the shift (stove, floor, walls, sinks, etc.).
