Promote cooperation, respect, and teamwork Job Mission The lead cook oversees all operational kitchen activities and administrative duties in the Chef's absence, from goods receipt to dish preparation. Responsible for coordinating the kitchen team, verifying dish quality and presentation, and supervising hygiene and safety best practices. Requirements and Competencies * Education: Elementary school. * Relevant experience: Minimum 1 year in the field. * Courses: Desirable courses in cleaning, conservation, or related fields; a free culinary course or related field is a plus. * Experience coordinating hot line stations, stoves, handling high-volume service, and meal production. Daily Routine * Control and direct all kitchen operational processes; * Maintain cooking stations clean and organized, and supervise overall kitchen hygiene; * Ensure raw material integrity from delivery through storage, preparation, and service; * Assist in planning and coordinate kitchen operational scheduling for service and production; * Respect and implement workload execution within legal limits; * Report recipe-related issues and propose possible solutions to the Chef; * Assist in evaluating and training new kitchen brigade members during the 45/90-day period; * Supervise subordinates' work, ensuring all preparations follow technical specifications and aesthetic standards; * Comply with nutrition and hygiene regulations, as well as food safety and labor safety standards; * Ensure hygiene across all kitchen-related areas, including cold rooms, storage areas, etc.; * Foster a cooperative and respectful environment and encourage teamwork among colleagues; * Evaluate team performance collectively and individually to enable internal promotions.
