Responsibilities and Duties Monitor the meal assembly line process in food production, performing the dietary assistance information checklist to ensure proper distribution to inpatient units. Support the development and monitoring of the food production map, verifying quantities of soft, standard, and other diets distributed, as well as additional orders requested, aiming to control departmental consumption. Support Production Nutritionists in developing and monitoring staff schedules (vacations, shifts, days off), reallocating teams when necessary, and supervising the team to meet service targets. Verify temperature monitoring records for refrigerators, freezers, cold rooms, and chlorine dosage, in accordance with food safety standards, to prevent spoilage and losses. Collect food samples, record date, time, and product on control forms, and store for 72 hours per established standards, ensuring food safety. Taste prepared foods for consumption, evaluating quality, presentation, and requesting adjustments to flavor, cooking, and temperature when necessary, contributing to customer satisfaction. Apply departmental standards and routines per the Good Manufacturing Practices Manual, ensuring food production safety and process qualification. Use appropriate PPE and verify and enforce PPE usage by the team to ensure occupational safety.
