Strategic Vision and Business Management * Supervise operations across multiple units, ensuring alignment with Grupo FIT's strategy. * Translate strategic objectives into practical routines, measurable goals, and clear indicators. * Participate in P&L analyses, financial planning, and performance reporting for decision-making. * Implement operational improvements and optimize workflows with focus on efficiency and scalability. * Support expansion projects and new formats, ensuring operational and commercial standards. Financial Control and Results * Manage operational budget, controlling input costs, labor, and general expenses. * Monitor key indicators such as COGS, average ticket, productivity, working hours, and operating margin. * Lead recovery plans for underperforming units, turning KPIs into actionable steps. * Analyze sales reports, profitability, and team performance for strategic decisions. People Management and Culture * Recruit, train, and supervise waitstaff, kitchen staff, and cashiers. * Conduct feedback sessions, performance evaluations, and development plans. * Promote the FIT culture in daily practice, serving as a role model for discipline, attitude, and consistency. * Collaborate with HR and Management on engagement, workplace climate, and talent retention. Operational Excellence * Be present in units, conducting checklists, routine rituals, and follow-ups. * Ensure standards of cleanliness, organization, and food safety (ANVISA and audits). * Manage inventory, expiration dates, and waste with focus on operational efficiency and healthy COGS. * Supervise store opening and closing procedures, including cash reconciliation. Day-to-day Activities * Conduct daily meetings to align activities and goals. * Check inventory and assist with purchase orders. * Monitor dish quality and service speed. * Handle customer complaints and feedback. * Train new employees and provide continuous feedback. 2510180202231756528
