Oversees daily departmental routines, ensuring cleanliness, organization, and proper food handling practices, including organizing and sanitizing cold storage rooms. Controls product dispatch to the sales area, determines production quantities based on demand, and monitors production waste. Also responsible for ingredient selection, procurement of departmental supplies, and communicating recipes and technical instructions to the team.
